A dual restaurant concept will bring both a daytime cafe and a dinner-focused restaurant to a former office building on the southwest corner of Parking Street and Northway.

Both will feature food and drink from South America, Central America and the Caribbean.

Dia Café will be the café and bakery by day. Noche Restaurante will be the restaurant and the evening bar.

Together they will be known as Dia y Noche. Day and night.

Owner Mike Drilling, who owns the Panther Pub & Eatery just to the south, has been busy orchestrating the extensive remodeling of the building at 6601 Northway to prepare it for the two restaurants, which will have separate dining rooms but will share a kitchen.

The design of the space was created by Dan Beyer Architects of Milwaukee. Braatz Building is the general contractor.

The two-in-one concept wasn’t the plan from the start, Drilling said, but that’s what it evolved into.

“It started because the idea would be just the Noche part where we wanted to open a Latin restaurant in downtown Greendale. And then the coffee part… we also wanted to have that morning presence. would be a nice addition for downtown Greendale. “

Both restaurants will be a welcome addition to the village’s downtown core, said Kristin Jastroch, Greendale’s tourism and events coordinator.

“We’re really excited to have a new restaurant open in the morning and in the evening, and to have a fun vibe, a different kind of vibe, a different kind of food, an ever-changing menu that they’re going to make.” , she said. noted. “I think this will be a great addition to downtown Greendale for sure.”

Drilling hired an executive chef from El Salvador and a sous chef from the Dominican Republic.

They will help develop the menu, which will rotate quarterly, and will include one nationality from South America, one from Central America, and one from the Caribbean.

Chicken roulade, made with a chicken stuffed with spinach and tomatoes and served with mashed potatoes and spicy sauce, is a Salvadoran dish that should be on the menu at Noche Restaurante in Greendale.

For example, page 1 of the menu might focus on Brazil, with entrees, appetizers, paired wines, and cocktails unique to Brazil. Page 2 could be El Salvador, and page 3 could be the Dominican Republic.

“Then run that for three months while we develop the next round, which could be Peru, Guatemala, and Puerto Rico,” he said.

The restaurants will have plenty of outdoor seating, with enough space for around 100 people, including a patio with a capacity of 72 people on the south side of the restaurant.

Dia y Noche, the partner restaurants that will open at 6601 Northway in Greendale at the end of September, will include two outdoor dining areas, including this large patio with a capacity of 72 people flanked by a fire on the south side of the building.

It was not Plan A.

Drilling said a proposal for outdoor seating with a smaller capacity had been submitted to the village, but when the pandemic hit those plans were revamped and resubmitted.

“Outside seating is the game right now, it’s so premium,” he said. “Everyone wants to dine out because they feel more comfortable.”

The outdoor seating factor associated with the Village of Greendale being less restrictive in terms of pandemic-related arrangements than other places, such as the City of Milwaukee, has given Drilling a window to move forward .

“We know that right now in the restaurant business, everyone is donning,” he said. “It’s not an easy thing to do right now. But there is a way to thread the needle.”

In total, around 50 new employees are being recruited to work at the two new restaurants, Drilling said.
