U.S. demand for bread and baked goods will experience short-term losses and longer-term growth

CLEVELAND, March 2, 2021 / PRNewswire / – U.S. demand for bread and baked goods is expected to grow nearly 1.0% per year in nominal terms through 2025, according to Bread and baked goods: United States, a report recently published by Freedonia Focus Reports. Population growth, increasing levels of disposable income and increasing product offerings with healthier profiles or novelty will stimulate demand. In addition, the foodservice segment is expected to experience a recovery once COVID-19 vaccinations multiply through 2021, contributing to sales growth through 2025. However, the maturity of the market and lingering concerns regarding the nutritional content of traditional bread and baked goods will hold back faster growth. In addition, the popularity of homemade bread and baked goods will continue to weigh on demand, as will purchases from establishments that retail for immediate consumption, which is outside the scope of this report.

Throughout 2020, many restaurants and other food establishments were forced to close due to the COVID-19 pandemic, and many of them never reopened. Demand in these outlets will continue to suffer; sales are expected to fall 1.2% in 2021 and potentially further in 2022. Nonetheless, the declines will be moderated to some extent as COVID-19 vaccination rates rise and consumer behavior begins to revert to the tendency. Additionally, the ubiquity of bread and the perception of cakes and pastries as comfort food will drive demand in retail outlets such as bakeries and grocery stores.

This and other key information is presented in Bread and baked goods: United States. This report forecasts the demand and shipments of bakery and bakery products in the United States in nominal US dollars to the manufacturer level through 2021 and 2025. Total demand and deliveries are segmented by product in terms of:

  • bread
  • Rollers
  • non-frozen cakes and pastries
  • frozen cakes and pastries

To illustrate historical trends, total demand, total shipments, various segments and trade are provided in annual series from 2010 to 2020.

Bread and rolls include both frozen and non-frozen products. Retail sale for immediate consumption is excluded from this report. Re-exports of bread and bakery products are excluded from demand and trade figures.
